Red
Magra Bendi is a typical aperitif of Aube region.
It comes from an
old local recipe
made
from a juice of raspberries, soaked in wine, to which
is added a little alcohol. This 17° aperitif
is classified among products such as Ratafia from
Champagne, Porto or
Italian aperitives.
This round wine has a nice red colour, a fruity taste,
it is usually drunk cold on ice or in a coktail (soupe
champenoise).
It can be cooked with a melon and can be used to deglaze
meat, for instance game, duck cutlet, ... and to cook sauces
(kidney, veal liver...)
