The Manufacturing process of the Red Magra Bendi

 

Red Magra Bendi is a typical aperitif of Aube region. It comes from an old local recipe made from a juice of raspberries, soaked in wine, to which is added a little alcohol. This 17° aperitif is classified among products such as Ratafia from Champagne, Porto or Italian aperitives.

This round wine has a nice red colour, a fruity taste, it is usually drunk cold on ice or in a coktail (soupe champenoise).

It can be cooked with a melon and can be used to deglaze meat, for instance game, duck cutlet, ... and to cook sauces (kidney, veal liver...)

 

 

The Manufacturing process of the White Magra Bendi

White Magra Bendi is an original Aubois aperitif that comes from an old local recipe, made from a subtle mixing of a juice of peaches and pears soaked in wine, to which is added a little alcohol.

This strong and dry 17° aperitif is classified among products such as Ratafia, Porto or Italian Aperitives. It has a nice yellow colour and a fruity taste.

It is usually drunk cool, on ice or in coktails

 

The ratafia from Champagne

Ratafia is a traditional aperitif made in Champagne region. It is not widespread and drunk at the feet of the wine press or in the wine growers’ cellars. Made from grinding of Champagne prapes (unfermented grape juice), to which alcohol is added. This delicate 18° aperitif is classified among products such as pineau des Charentes, Floc de Gascogne.

Ratafia is usually tasted cool, naturally and above all without ice.

It can be cooked to be served with quail and grapes, guinea fowl and chanterelle or “trompettes de la mort” and “chapon aux morilles”.

 

The selection Champagne

It's a champagne select by Didier BARBE among a wide range. He is made up of a majority of black pinot for the fruity and a touch of chardonnay for the fineness.

This champagne has a gilded dress, a fruity taste as well as a note of white fruits, dry and a finish on red fruits.

One time int the mouth, you will discover a powerfull wine sustain by a good plumpness. You could appreciate this champagne at the aperitif and it could you accompany during a meal.
