Our advices:

Ratafia is a traditional aperitif made in Champagne region. It is not widespread and drunk at the feet of the wine press or in the wine growers’ cellars

Ratafia is usually tasted cool, naturally and above all without ice.

It can be cooked to be served with quail and grapes, guinea fowl and chanterelle or “trompettes de la mort” and “chapon aux morilles”.

 

The apertif from Aube, more precisely from the Foret D'Orient, presents you its ratafia from champagne, a traditionnal recipe essentially produced in Aube by Dider Barbe.
